Formula

Method

  1. Dissolve yeast (≈7g) in warm water with sugar or 1 tsp honey. Rest 5-10 mins until foamy.
  2. Add flour, salt, and olive oil. Knead 7-8 mins until smooth, elastic, and only slightly sticky.
  3. Cover and bulk ferment 35-45 mins at room temperature, until roughly doubled.
  4. Divide into 10 equal pieces. Roll each into a 30 cm rope, fold in half, twist the two strands, and join the ends to form a ring.
  5. Dip each ring in honey-water (or grape molasses/petimezi), then press generously into sesame seeds.
  6. Place on parchment-lined trays, rest 10-15 mins while the oven preheats to 200°C.
  7. Bake 15-20 mins at 200*C preheated with fan until deeply golden and crisp. Cool on a wire rack.
